VEGAN CAESAR SALAD BY CHEF CHRISSY TRACEY
This yummy, nutrient packed take on the classic caesar salad utilizes kelp and was created by content creator and chef, Chrissy Tracey:
Vegan Caesar Salad (made with Organic Kelp Powder)
- 1 head of romaine, roughly chopped
- 1 cup raw cashews, soaked*
- 1/4 cup filtered water
- juice of 1/2 lemon
- 3 cloves garlic, minced
- 1/2 tbsp nutritional yeast
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- 2 tsp vegan Worcestershire sauce
- 1 teaspoon kosher salt
- 1 teaspoon fresh cracked black pepper
- 1 tbsp Atlantic Sea Farms Organic Kelp Powder
- 3 tbsp olive oil
- 1/2 cup croutons or crispy chickpeas
- garnish: your choice of parmesan, red pepper flakes
Add soaked cashews to a blender with the water and blend until smooth and creamy for the cashew cream base.
**To soften the texture of the cashews, soak them overnight in water or cover with boiling water and let stand for 5 minutes then discard of the water)
Make the dressing by combining cashew cream with the remaining ingredients up to the croutons, whisking vigorously to combine.
Toss the romaine and the croutons together with your desired amount of dressing, then garnish with parmesan and red pepper flakes, and enjoy!
