SMOKED SALMON DIP WITH KELP

INGREDIENTS:
- 3/4 cup chopped smoked salmon
- 3/4 cup thawed Ready-to-Eat Kelp (or sub in 3 thawed Kelp Cubes)
- 1/3 cup Greek yogurt
- 1/4 cup plus 2 Tbsp. mayonnaise
- 2 Tbsp. chopped fresh dill
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. chopped capers
- Salt and black pepper to taste
- 2 Tbsp. chopped chives
STEPS:
- Place your smoked salmon and Kelp into a food processor. Pulse a few times to break them down to a finer texture, but avoid over-processing. Add the lemon juice and pulse to mix it in.
- In a large mixing bowl, add your kelp fish mixture with all other ingredients, and mix to combine.
- Season to taste with more salt and pepper as needed. Enjoy with crudités, fresh bread, crackers, or even bagels!
