SESAME SOBA NOODLES WITH KELP

INGREDIENTS

  • 8-10 ounces soba noodles
  • 1/4 cup carrots, peeled, small dice
  • 1/4 cup roughly chopped Atlantic Sea Farms Ready-Cut Kelp
  • 2 tablespoons scallion, thinly sliced
  • 2 tablespoons cilantro, roughly chopped
  • 1/4  cup reserved noodle water
  • 3 1/2 tablespoons tahini
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar in the raw
  • 1 tablespoon rice vinegar
  • 1 1/2  teaspoons hot sauce
  • 1 teaspoon ginger root, grated
  • 1 teaspoon sesame oil

DIRECTIONS

In a small pot, cook soba noodles according to package directions, drain and add to a bowl with other carrots, kelp, scallions and cilantro. In a small bowl, combine dressing ingredients and mix well. Pour over noodles and toss until coated.
