SEAWEED DUMPLINGS

INGREDIENTS:

  • 1 1/2 cups Atlantic Sea Farms Seaweed Salad (you can use Fermented Seaweed Salad, Frozen Seaweed Salad, or Spicy Gochujang Seaweed Salad)
  • 2 cups firm tofu, crumbled and strained
  • 1 cup thinly sliced napa cabbage
  • 1 cup shiitake mushrooms
  • 1 clove of garlic
  • 1 teaspoon ginger
  • 1 Tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 4 Tablespoons green onions, white and green parts separated
  • 1 Tablespoon cornstarch
  • 15 store-bought dumpling wrappers
  • Oil for cooking
  • Dumpling dipping sauce of your choice

STEPS:

  1. In a food processor, combine shiitake mushrooms, garlic, ginger, and white parts of green onions. Pulse until it turns into a crumbled paste.
  2. In a pan, heat a small amount of oil. Sauté the paste for 4 minutes before adding the sliced cabbage, mixing into the paste, and cooking for another 2-4 minutes.
  3. In a large mixing bowl, add the crumbled tofu, cooked filling and cabbage, green parts of scallions, Atlantic Sea Farms Seaweed Salad, soy sauce, sesame oil, and cornstarch. Stir until combined.
  4. Prepare the dumplings: Set out the dumpling wrappers and a small bowl of water for sealing the edges of the wrappers. Place a dumpling wrapper on the palm of your hand, add about 1 tablespoon of filling into the center of the wrapper. Dip your finger in the water and moisten the edges of the wrapper. Fold the wrapper over the filling to form a half-moon shape. Press the edges firmly to seal. You can pleat the edges if desired, for a decorative touch. Repeat this process until all the filling and wrappers are used.
  5. Cook the dumplings: Heat 1-2 Tablespoons of oil in a non-stick skillet over medium-high heat. Add the dumplings, making sure they don’t touch in the pan. Fry for 2-3 minutes, until the bottoms are golden brown. Add 1/3 cup of water to the pan and cover with a lid, steaming the dumplings for 5-7 minutes until the water evaporates and the dumplings are fully cooked. Remove the lid and let the dumplings cook for another 1-2 minutes to re-crisp the bottoms.
  6. Let rest and serve dumplings with your favorite dipping sauce! Enjoy!
