SEA VEGGIE BURGERS WITH GREEN TOMATOES

INGREDIENTS:
- 2 Basil Pesto Atlantic Sea Farms Sea Veggie Burgers
- 2 potato burger rolls
- 1 Tablespoon high-heat oil like grapeseed or avocado oil
- 1/4 cup thin slices of red onion
- Green tomatoes, in 1/4 inch thick slices (optional: quick pickle your green tomato slices)
- 2-4 burger-sized lettuce leaves
- 2 teaspoons butter
- 4 teaspoons mayo (optional: try a spicy mayo)
STEPS:
- Heat a nonstick frying pan with the high-heat oil to medium-high heat.
- Once your pan is ready, place frozen Sea-Veggie Burgers into the pan and cook for about 8-10 minutes on each side, or until they turn a nice crispy brown color on each side.
- Remove the burgers from the pan, and let them rest on a plate lined with paper towels. Let the pan cool slightly, and then you can use a few dry paper towels to remove crumbs and excess oil from the pan once it is cool enough.
- Spread the butter on the insides of your potato rolls. Heat the wiped pan up to medium heat, and once it reaches a good temperature, toast your rolls with the buttered side down on the pan just for a minute or so, until they reach a nice toasted level on the inside. Remove buns from pan.
- Assemble your burgers: Spread mayo on the inside of the bottom bun. Layer your green tomato slices, sliced onion, lettuce, and your veggie burger atop the bottom bun. Spread a layer of mayo onto the inside of the top but, and place in on top of your Sea-Veggie Burger. Pair with a side salad, fries, chips – whatever your heart desires. Enjoy!
