KELP CRACKERS WITH WHITE BEAN KELP DIP

INGREDIENTS for Kelp Crackers

  • 1.25 cups white whole wheat flour
  • 2 tsp. Atlantic Sea Farms Kelp Powder
  • 1 tsp. fine sea salt
  • 1/4 cup + 1 Tbsp. extra virgin olive oil
  • 1/2 cup water
  • Topping: sesame seeds, Atlantic Sea Farms Kelp Flakes

INGREDIENTS for Kelp Dip:

  • 1 15-oz can white cannellini beans, rinsed and drained
  • 2 each Atlantic Sea Farms Kelp Cubes
  • handful of fresh basil (~1/3 – 1/2 cup)
  • 2-3 Tbsp. fresh lemon juice
  • 2 Tbsp. extra virgin olive oil
  • 1/4 large ripe avocado
  • 1/2 tsp. ground coriander
  • 1/2 tsp fine sea salt
  • ground black pepper to taste
  • 1-2 Tbsp. water if needed

STEPS:

1.) Preheat oven to 375°F.

2.) Combine ingredients in a mixing bowl and gently knead until the dough can be formed into a smooth ball.

3.) Roll dough out on a lightly floured surface, to 1/8″ thickness.

4.) Cut into desired cracker shapes and place on parchment lined sheet tray.

5.) Sprinkle each cracker with sesame seeds and kelp flakes, gently pressing the seeds and flakes into the dough.

6.) Back for 12-15 minutes until crispy. Cool on a rack.

7.) While the crackers are baking, make your Kelp Dip. Combine all ingredients in food processor or high speed blender and blend until smooth.

8.) Serve your Kelp Crackers with the White Bean Kelp Dip, and enjoy!
