ILMA LOPEZ’ SWEET KELP CAKE RECIPE

Kelp Cake (dairy free/vegetarian)

Preheat oven to 350F and line the bottom of a cake pan with parchment paper. 

Ingredients: 

  • 1 1/2 c      All purpose flour
  •    1/2 c      Rye flour
  •       2 tsp   Baking Soda
  •       2 tsp   Baking Powder
  •    1/2 tsp   Salt
  • 1 1/3 c      Apple Sauce/Apple Puree
  •    1/2 c      Your favorite plant-based milk 
  •    1/2 c      Honey (or maple syrup if you want to make it vegan) 
  •       1 c      Kelp
  •       1 tsp   Vanilla extract

Mix the dry ingredients and make sure you don’t have any lumps, then mix all the wet ingredients, including the kelp, and combine. Mix well but don’t overwork it. 

Bake at  350F for 30 min, or until the middle is firm and no longer sticky. Let cool and cover with your favorite icing, whipped cream and fruit, or powdered sugar.
