DECONSTRUCTED VEGGIE BURGER SALAD

INGREDIENTS:
- 2 Atlantic Sea Farms Veggie Burgers
- 2 Tablespoons of high heat oil, like avocado oil
- 1/3 an english cucumber, chopped
- 3/4 cup roasted root vegetables
- 3/4 cup halved cherry tomatoes
- 1/2 cup cubed avocado
- 1/4 cup thinly sliced red onion
- 1 large bowl of fresh green lettuce of your choice
- 1 Tablespoon ranch dressing
- Salt and pepper to taste
STEPS:
- Roast some root vegetables of your choice in the oven, until they’re cooked through (we used packaged frozen sweet potato and beet fries that we roasted in the oven at 375° F, for 20 minutes).
- Fry the Veggie Burgers right from frozen, in an oiled pan on high heat – frying the burgers for 10 minutes on each side, or until golden and crispy. Let rest on a plate covered with paper towel for 5-10 minutes.
- Build your salad – top your lettuce with all the vegetables, add the Veggie Burgers, and drizzle with ranch dressing, and add salt and pepper to taste. Toss and enjoy!
