Seaweed is one of the best food sources of iodine (in addition to seafood, dairy, iodized salt and fortified foods). Iodine is needed to make thyroid hormones that help regulate metabolism. Without enough iodine, the thyroid hormones don’t work as they should and can lead to an under-active or overactive thyroid gland.

Vegan & Vegetarian Health

In the U.S., people obtain most of their dietary iodine from iodized salt and milk.
